Breadfruit Pudding

A delicious pudding made with ripe breadfruit
Servings 12

Ingredients
  

  • 2 pounds ripe breadfruit
  • 2 cups all purpose gluten-free flour
  • 1 cup sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups coconut milk
  • 1 teaspoon vanilla
  • 1 tablespoon ground flaxseeds
  • 1/2 cup coconut milk
  • 1 tablespoon sugar
  • 1/2 teaspoon vanilla
  • Dash of cinnamon

Instructions
 

  • Preheat oven 375 degrees F. Oil a 9x 13 casserole pan
  • Wash and dry the fully ripened breadfruit
  • Peel the breadfruit with a knife
  • Remove the pit and mash the flesh in a bowl
  • Add in and mix vanilla, ground flaxseeds, and coconut
  • In a separate bowl mix salt, cinnamon, sugar, and flour
  • Add together the two bowls and mix into a smooth batter
  • Pour batter into your pan and bake for 45 minutes
  • Start preparing the custard topping
  • Combine, cinnamon, vanilla, sugar and coconut milk
  • After 45 minutes, pour the custard mix on top of the pudding and bake for another 45 minutes
  • Take pudding out of the oven and let cool, then serve with whipped cream on top
