Breadfruit Pudding
A delicious pudding made with ripe breadfruit
Ingredients
- 2 pounds ripe breadfruit
- 2 cups all purpose gluten-free flour
- 1 cup sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 1/2 cups coconut milk
- 1 teaspoon vanilla
- 1 tablespoon ground flaxseeds
- 1/2 cup coconut milk
- 1 tablespoon sugar
- 1/2 teaspoon vanilla
- Dash of cinnamon
Instructions
- Preheat oven 375 degrees F. Oil a 9x 13 casserole pan
- Wash and dry the fully ripened breadfruit
- Peel the breadfruit with a knife
- Remove the pit and mash the flesh in a bowl
- Add in and mix vanilla, ground flaxseeds, and coconut
- In a separate bowl mix salt, cinnamon, sugar, and flour
- Add together the two bowls and mix into a smooth batter
- Pour batter into your pan and bake for 45 minutes
- Start preparing the custard topping
- Combine, cinnamon, vanilla, sugar and coconut milk
- After 45 minutes, pour the custard mix on top of the pudding and bake for another 45 minutes
- Take pudding out of the oven and let cool, then serve with whipped cream on top
