Wash and cut breadfruit into quarters
Cut out breadfruit core and peel the skin
Bring water to a boil in a large pot and add breadfruit
Simmer breadfruit for 15-20 minutes until the breadfruit is fork tender
Cook onion until soft in a pan for 3 minutes
Add to onion garlic, bell pepper, green onions, thyme, tomatoes, and seasonings and cook for 2 minutes
Add the strained breadfruit to the mixture along with coconut milk and salt, bringing to a boil
Reduce simmer and cook until sauce thickens for 10 minutes
